Homemade Paste & "Taste of the Sun"

Homemade pasta "Taste the sun"- homemade pasta made from durum wheat flour with porcini mushrooms, parmesan and cream sauce.

Ingredients:

  1. white mushrooms 80 g .;
  2. Rosemary 2 g.;
  3. thyme 1 g.;
  4. oregano 1 g.;
  5. Parmesan 20 g.;
  6. hunting sausages 80g
  7. cream 20-25% fat 8 grams
  8. salt and pepper to taste;
  9. garlic 4 g.;
  10. peppers stuffed with feta cheese 5 pcs.
  11. egg 1 piece;
  12. olive oil 10 ml.

Cooking

Make the dough for the paste. Pour olive oil and one egg into a bowl. Here it is important to monitor the weight of the eggs, as this slightly changes the proportions. Ideal proportions of dough for pasta: chicken egg - 40 g., Olive oil - 10 ml., Durum wheat flour - 100 g. Beat the egg and add olive oil.

Pour out the flour and carefully knead the dough with your hands. Leave the dough at room temperature for 20 minutes.

Roll the dough with a wooden rolling pin under the size of a pasty. Must be a lot of flour to sprinkle the dough when rolling.

We roll a strip of dough in pastry at maximum thickness. Then we rearrange the division into the penultimate value of the thickness of the dough and then roll the dough again, holding it with both hands.

Roll the dough through the holes for making the tagliatelle. Cut off and properly roll in flour, so that the paste does not coalesce with each other.

In a large saucepan pour 400 ml. water and a teaspoon of olive oil. We throw the paste there and take it out a minute after the water boils Pasta is not washed. It is necessary to boil it up to the state of “al dente” - and these are not just beautiful words. Learn to feel this moment, when the pasta will begin to slightly "spring" when bitten. Now rub the Parmesan cheese on a fine grater. Finely chop hunting sausages, mushrooms, finely   we cut rosemary, oregano, thyme. Two cloves of garlic are cleaned and also finely chopped. Pour olive oil into a large frying pan and fry the garlic until golden brown, and then put mushrooms on the frying pan. Fry for a few minutes.

Now put the sausages and all the chopped greens in the pan, immediately add the cream and tatiatelli (pasta). Sprinkle parmesan on top. Mix and hold on the stove for another couple of minutes. We remove. Put on a plate.
