Stainless steel and titanium frying pans

Their only disadvantage is the high cost. As for stainless steel pans, then this is probably the best option. The fact is that food cooked in such a pan, can be considered the most healthy, because stainless steel refers to the type of materials that do not interact with almost any substances, especially in the process of cooking. The only thing to be remembered when using a stainless steel frying pan is that it should not be left empty on the fire, as it can in this case be covered with a bloom of blue or green. Do not forget also that you need to wash the stainless steel pan without using abrasive detergents.

In order to choose the right titanium or stainless steel frying pan, pay attention, firstly, to the absence of damage, because the sellers may sell you a low-quality product, the defects of which are not immediately apparent. Teflon coated non-stick pans

In the middle of the last century, American scientists invented a new material, which was called "polytetrafluoroethylene". However, it was too difficult to pronounce and memorize, so it became known as Teflon. Teflon pan, or rather, an aluminum or steel pan with a teflon coating is very resistant to acid-base medium. In practice, this means that you can cook almost anything on it. However, it should be noted that although manufacturers of frying pans with Teflon coating say they can fry products without the use of oil, nevertheless, it is still better to add it for frying.There are frying pans with a smooth and embossed non-stick coating. The latter option is better, because the food is less in contact with the coating during cooking and therefore burns even less. It is not recommended to overheat the Teflon pan, since at high temperatures (more than 200 degrees Celsius) Teflon begins to gradually evaporate and release harmful volatile compounds to health. In addition, the coating can crack at high temperatures. In no case should you cook a spoiled pan - you should immediately throw it away. If you want to use a frying pan with a non-stick coating for a long time - buy a thick frying pan with a wall thickness and a diameter of at least 5 mm. Best of all, if the pan has a double steel bottom, and the layer of Teflon is thick and rough.

Other types of pans

Aluminum frying pans are very light, have high thermal conductivity and low cost, but have a number of significant drawbacks. To choose the right ceramic pan, the first thing you need to pay attention to is the weight of the product.Do not buy into the lightness of the pan. Heavier pans have thicker walls and bottom, which means that they heat up more evenly, which is ideal for cooking. Moreover, heavier frying pans with a ceramic coating and not deform so quickly. Also pay attention to the coating material itself - it should not have chips and other defects, otherwise the food will be burnt and cooked in a completely different way than you would like.

And finally, the last thing left for us is to choose a pan for pancakes. It is believed that the best pancakes are obtained in cast iron pans, precisely because of their natural non-stick coating. However, many people use frying pans with a Teflon non-stick coating, because they are lighter, but they are still inferior to cast iron in their properties and quality of pancakes. Well, if you decide to choose an aluminum pan for cooking pancakes, then note that this requires a cast pan with a thick bottom, otherwise the pan will very quickly lose its shape due to overheating.
